I'm such unorganized person that I haven't made any list of 10-string pieces in Boije ad RiBS :-)
But a good source is this page:
Perform a find operation on that page, searching for "10-string", and also for 8 and 7 string.
The total number of multi-string pieces isn't very big (except Coste and Mertz), and besides Mertz, Coste and Legnani the music isn't very high quality
but there are some reasonably nice pieces.
Some composers to mention:
Decker-Schenk
Dubez
Legnani (three works, op,201, 202 and 203) for 7 or 8-string
Bayer (at least one piece, op.22)
Coste (7-string)
Mertz

You might need to weed through their works, since they also composed for 6-string. Also, there is a collection of Bach Lute Works transcribed to 10-string, although with that I'd recommend using a more modern transcription and just play the original basses lower. Many editions have 8s under the basses that were originally an octave lower.
