I know that osc sync can alter how the wave looks on the scope, but,
as far as sonic timbre (other than for multiple unison notes), I can't
think of an example where having sync on or off makes a difference.

I'm hoping that someone can prove me wrong!

I can only guess that you mistaken the Oscillator Sync with the Oscillator Phase parameter and even that parameter makes a difference in conjunction with FM- ...
