Larry,

Ronald Sachs violins on Pleasant Hill Road has a very good selection.  He caters mostly to classical type players but understands the needs/requirements of old time/bluegrass players and will set up the instrument to your preference.  He has a web site.  I had him make me a 5 string fiddle which turned out perfectly and I have bought several fiddles from him for my son.  I know him quite well and trust his judgment.

He will take a used average quality violin and take the top off and regraduate the thickness to either your preference (depending on the sound you are trying to achieve) or to his specifications.  He also has a good selection of new ones.
