i would say perhaps an el500 sounds too modern for a church, and perhaps you have to spare money ;-)? you should either buy an old model (el90 or el70) and if the church is great you should provide an output to a good amplifyer and a good pair (two good pairs) of speakers.
in this last case and if the organist is a good player a lot of old models are well convenient, the el-X0 series has good classical sounds. Perhaps an elX1m ? for a church, it would be great !...
if you want to buy a new organ : the El-X00 series is more modern sounding, to be powerfull enough, i suggest an el900 (el700 is no more manufactured). You could also buy an el100 (organ sounds very good) with a good amplifyer, it's a midi supporting organ, you could use such files for classic job.
