I've asked a few people, and this is what they've said.
A Yamaha EMP 100 is capable of achieving pitch shifts. This is a multi-effects
device and can add reverb, delay and much more. If you miked up a whole ensemble
it could shift everything down so that you could play at 8 foot pitch!
Unfortunately it is no longer made, but there are secondhand ones available, as
most people who used them to add effects in multi-track recordings have moved on
to computer recording techniques, which have built in effects.
It is also possible to use a "pitch to voltage" synth linked to a close mic, or
bug on a recorder but they are temperamental.
There are also a number of electronic harmoniser units, but they are a bit
limited. The cheap ones are terrible and the good ones cost a medium sized
fortune.
