Basically, no. They all faithfully record whatever you throw at them
(but see the answer to point 3, below).

I would say this is far more likely to be the case. Depending on the
DAW you use, there may (or may not) be midi filter settings that will
not pass a lot of redundant information through. There's a lot of
redundant stuff with pitch to midi conversion - a ton of unnecessary
pitch bend, for starters.
