Also, if you don't particularly want to solder up the bits and pieces yourself, it would still be fairly simple and just about as cheap as diy to get yourself

Hi, ... Agreed! ... Not Paul, but I'll give it a go. :-) If you can DIY, the Stereo Panner from Music From Outer Space might be what you are looking for.
