How sad that Patrick had passed away. Talent in the programming area for this type of application must be rare (obvious since there is so little out there for us).
Low-traffic group or not - I got two responses for which I am grateful. I shall remain a member, one never knows what interesting tid-bits may be posted.
I had been in touch with Bruce Miles late May/early June regarding his soundfonts. His recommendation on the type of software (organ console) was jOrgan. I don't recall that he said he had experimented with Comput'orgue - I will have to research my old emails.
I had previously downloaded the jOrgan software in June and experimented with it a little using the pre-written disposition files created by Bruce. I had my mother staying with me for a couple of months since then and have only just gotten back into looking at what I can accomplish using the soundfonts.
I came across Comput'Orgue and it looked very promising, so I decided to play with it for a while and see where I would get.
Since I wasn't getting very far with it, and after receiving the two emails in response to my group posting, I resurrected jOrgan and today began to create a disposition file of my own using the Jeux soundfonts. (I am particularly enamored with the French organ for some reason). 
In making a comparison between the two programs (jOrgan and Comput'Organ) the on-screen interface is really very similar and I shall concentrate my efforts on JOrgan but retain the Comput'Organ on file in the event I come across someone who can possibly uncover the mystery as to why I can can only access the general MIDI sounds in the soundbank.
I can see where, in Comput'orgue, it enables you to select the soundbank that you wish to use. I have my soundfont manager all set and know exactly which bank (banks) I wish to use, BUT...........the software does not want to cooperate with me......or I could defintely be doing soemthing wrong (very likely).
With regard to Hauptwerke. I have looked at it but would like to concentrate on software that uses soundfonts at this time. I think I say that Hauptwerke ahs various organs which have been sampled, so it might be something fun to work with in the future.

The general idea is that you need to send a bank switching command
to the SoundBlaster MIDI device to tell it which collection of
instruments you are using on each channel.  I don't recall exactly
what that instruction is off the top of my head but if you get down
to the point of just needing the actual numbers for a bank select,
post again and I'll dig it out.

Another program you might want to look at it Hauptwerk by Martin
Dyde.

Hauptwerk does not use SoundFonts.  It includes its own softsynth. 
It uses incredible amounts of memory but it sounds very good.  The
thrust of that project has been creating virtual reproductions of
historic organs.  It has a very nice GUI and excellent facilities
for connecting a real organ console.
