Some additional resources to address your questions --

if you haven't already consulted it, you might want to review the
articles on "Song" and "Sean Nos" in _The Companion To Traditional Irish
Music_, edited by Fintan Vallely (New York: New York University Press,
c1999). There is a great deal of in-depth information on traditional
singing in that volume that may be of interest. If you can't afford to
buy it (around $50), your local library can obtain a copy for you
through interlibrary loan.

The author of much of the sean nos article is my friend Julie Henigan.
Julie has an MA in Folklore from University of North Carolina in Chapel
Hill, and her MA thesis was on Sean Nos. She has been to Ireland many
times (usually to the Donegal gaeltacht) and knows the traditional scene
well.
